This is a scanning electron micrograph of yoghurt. Yogurt is traditionally made by fermenting milk using lactobacilli (Lactobacillus bulgaricus) and streptococci (Streptococcus thermophilus). Lactococci (shown) produce less lactic acid and thus, make a less acidic modern yogurt.
